The Capim Santo restaurant, founded in 1985 in Trancoso, Bahia, by Sandra Marques and Fernando Leite, parents of Chef Morena Leite, is celebrating 40 years of history.
Renowned for its cuisine that combines Brazilian ingredients with French techniques, Capim Santo expanded its operations to São Paulo and Rio de Janeiro, establishing itself as a benchmark in contemporary Brazilian gastronomy.
Morena Leite, who grew up amidst the kitchen pots of the original restaurant, graduated from Le Cordon Bleu in Paris and took over the leadership of the São Paulo branch in 1999. Under her direction, Capim Santo expanded its presence, opening branches in iconic locations such as the Museum of the Brazilian House (Museu da Casa Brasileira) and the Tomie Ohtake Institute. Additionally, she created the Capim Santo Institute, which offers professional training courses in gastronomy for people in vulnerable social situations.
Throughout these four decades, Capim Santo has stood out for its innovative approach and commitment to enhancing national cuisine, staying true to its roots while adapting to contemporary trends.
The celebration of the restaurant’s 40th anniversary reflects a journey of success and dedication to Brazilian gastronomy.
